As someone that have had anemia caused by iron deficiency for a very long time, when she described the fingernails, I instantly recognized mine, and looked down at them…
… and learned that apparently I have been good managing my iron intake cause they are not like this anymore! XD

(Also, yeah, all she says is good. To add to food she mention, beans, molasses, and avocados are all good source of iron too. Heck, I have, sometimes, diluted some molasses in the water I use to water my plants, as a “homemade” iron fertilizer, when my dumb local hardware store don’t have the right fertilizers when I need it. We tend to not know this, but to be good sources of iron, they kinda need to get it somewhere first! And feeding them enough iron will tend to produce greener leaves! … but I digress!)

There's some weight in that adding nails in their wine. I heard cooking with iron utensils helps in this kind of cases. Thou it feels weird that he is suffering from anemia when iron cookware is still a thing in the Renaissance era. Maybe it's the cuisine? There's a few cooking methods that don't need that much utensils in the process so I bet that's the case for him.
He isnt really eating anything with Iron like Pork or Liver, so that deficit was explained really well. On the other Hand, if he doesnt eat Meat or fish.. what the hell is he eating in that Timeline? Grass?

its a very interesting idea to have the love interest be the one who reincarnated instead of the main protagonist. thought it may just be that he is and doesnt know it yet but there is no evidence of that yet

What she mentions are all things common to the modern Japanese diet, rather than that of the Western world. (Seedweed was and remains traditionally and frequently consumed regionally in Europe rather than generally, and is not typically consumed in the former European colonies outside of East Asian cooking, so I'll leave it out.)
* Eggs! Both poultry eggs and roe / caviar (in other words, fish eggs). (Considering the East Asian love of eggs, I'm very surprised she didn't mention them.)
  • Beans in general, but especially (apart from soybeans, which are indeed an excellent vegetable source of iron, but not exactly native to the Western World): chickpeas, broad/fava beans, and lentils. Also many seeds including sesame, flax, hemp, poppy, and mustard. Additionally, all culinary nuts. Peas are yet another good source.
  • Leaf vegetables, especially dark green ones: beet greens, dandelion greens, rapini / raab, chard, kale, spinach, rocket / arugula, mustard greens, and so on. Also many common herbs, including basil, thyme, sage, and rosemary. Additionally, garlic, garlic scapes, chives, and scallions.
  • Most grains, with the exception of white rice: rye, buckwheat, barely, oats, and wheat.
  • Certain mushrooms / fungi: oyster mushrooms, morels, and truffles.
  • Treacle and molasses (to a somewhat lesser extent, cane juice, too), dates, pumpkins, and (believe it or not) cocoa / dark chocolate.
To summarize: eggs, beans, culinary nuts and seeds, dark leaf vegetables (and herbs/spices), most grains, and some miscellaneous foods.

(As for the stuff Vandel doesn't eat: For meat, go with red meat, dark meat, or liver. For fish, go with oily fish.)

One thing she barely touches upon is that Vitamin C helps absorb iron, especially iron from non-animal sources — something this guy clearly needs.

I don't know about the European diet at that time but I'm pretty sure a vegan lifestyle is possible in Asia in the medieval times. She did state a few green foods that can help with the iron deficiency which are pretty commonly found in Asian cuisine.

This is a real remedy that used to exist. They'd put iron in various forms into wine and drink it. Wasn't necessiarly nails, but iron shavings would work as well. The benefit of nails is that you just drop it in, and the alcohol likely would cause some of it to come off into the wine and disperse, and the flavor would be mostly masked by the wine itself. But yeah, totally real remedy.

It is difficult to gain from the iron accumulations of animal tissue sources because your body has to break down the tissue to a level where it can absorb the nutrients it needs, and if your digestive tract does not have enough acid and enzymes the tissue you eat just passes through as waste or even harmful sludge.
Basically the easiest ways to get iron is by ingesting plants that accumulated iron from the soil that was broken down through natural oxidative or chelation processes.
Vitamin C is mandatory for the body to absorb and utilize iron in pharmaceutical forms like iron sulfate.
There are now some supplements that use chelated forms of iron that can easily be absorbed by the body without the utilization issues and side effects of iron sulfate.
There are lots of vegan sources of iron because the critters all get the iron in their body from environmental sources in the first place. 🦠⛓️:nyoron:

now that we are sure she was a doctor in previous life, I wonder what is the MC's previous life's job is. A doctor couple can be boring. We can go for unique troupe such as a soldier - medic couple in previous life.
If he is anything like in this life, soldier, police or construction seem like the more likely possibilities. Whatever he did, it was very physical.

Previous chapters already hinted a it. But this is waving a sign saying "I'm a reincarnator who used to be a doctor in my previous life!"

Yes. And to be honest, I wonder why the author went that route. It just feels... kinda redundant? I don't know, the main character is still the dude. So... why was the reincarnator part needed?
