That really depends on how much good quality oil is available. You can't exactly shallow fry fries or wedges, and honestly, having made them from scratch, they're a pain to make because you have to cut them to shape, blanche them, shock them, and then double fry them to make really, really good ones. And potato wedges are even more annoying because you have to season them before you fry them, which means the seasoning will fall off and contaminate the oil, and having to cook a volume necessary to feed an army would mean the oil would get hammered very quickly and would need almost constant replacement.can't go wrong with soup/stew but surprised he didn't reinvent fries or potato wedges XD
