sushi chef culture is really absurd in some restaurants... wash dishes for 3 years, watch for 5 years, etc etc. Respect to those who overcame it, but I can't imagine spending so many years just so I am "approved" to make sushi

That's the weight of tradition upped by a million, unfortunately. Not even chefs working in the finest restaurants in Paris are that absurd. You do have to do menial labour and watch a lot but never a single thing. Spending 2 3 years just prepping ingredients is unproductive as hell.
