I mean, Japan does have a culture/history of eating the shark meat. Aside from the shark cuisine showcased in one of the precious chapters, surimi in various areas in Japan are made with shark meat, so the rest of the shark can still be used after the fin is taken. Unlike in Chinese cuisine where I couldn't find anything about shark meat cooking.

True, Japan's shark cuisine is fascinating and something I do respect and am eager to try for myself some day. My mom even made qing zheng shark meat once, I guess cause she found some shark meat and was excited to try cooking it. I distinctly remember it tasting more pungent than regular steamed fish, but I quite liked it.

Unfortunately, that seems to be something of an exception. Most shark fin procured in Chinese communities is through shark finning, and Kariya seems unaware of the practice with how much he pushes shark fin as a pinnacle of Chinese cuisine. Even casually, so many people still think of shark fin soup as a luxury associated with weddings and other formal banquets. I can only hope that fisheries are comprehensive in their documentation of shark fin sources.

I really really like the panel of the deputy punching Yamaoka on page 5. Something about his expression just cracked me up. Also funny, a friend of mine is going through some pretty bad morning sickness lately. I thought maybe this chapter would give me good recipe ideas to suggest her, but...
