For those who listen to classical music what periods and instrument/instrumentation do you all prefer? I'm curious.

Personally partial to organ music, whether it's the German Baroque (JS BACH, and I guess Pachelbel and Buxtehude can come along too) or the French late Romantic/early 20th Century (Franck through Widor to Dupre, Messiaen, etc.). Or Max Reger, if you want something to gnaw on.

Symphonic works are usually good, particularly the German Romantics from Beethoven and Schubert through Mahler and R. Strauss, though I will pass on Bruckner.

Got a collection from an estate a couple years back that had a lot of chamber music, and have decided I like Classical string quartets (I'll let you know about the Romantics when I get there). Any work for cello, either solo or accompanied, will automatically get at least one listen (Casals, Fournier, and Rostropovich are three cellists I look out for).

Almost all my listening is on LP, so it's a lot of older artists and recordings.
