So to be clear, it sounds like there's gonna be like at most just enough chapters to finish the volume right? Cuz the last panel basically sets up for a timeskip to the ending. Or is there gonna be a "graduated working adult" arc where they just vie for each other's attention while in the polycule or something in the midst of their work lives lmao.

It's 3 chapters until the end of the volume, and this is the last volume. Most likely it will end at ch 59, or maybe 60. (but it could also ends at 58, with some extras afterward).
