You know, part of me thought the reason Leon didnt want to go out much was fear of someone recognizing him. Considering he was the greatest dragonslayer, you'd think someone would know who he is. Yet no matter where he goes, not a single dragon knows who he is, especially the leaders?

Or the battle were only near the boundaries between human territory and the dragons territories so only dragon soldiers and dragons clan near living the border know about him.
Or every clan Leon fought go extinct after he won.

The full-body plate armour is the biggest factor, but honestly? I think it's a combination of the various reasons you've listed.
Facial anonymity? Check.
Remote battlefield where only frontline troops were stationed? Check.
Most / all dragons who fought Leon died? Probably! As far as I know, we don't know the exact circumstances of his capture yet, but it seems likely that it took a Ruler-class dragon to take him down. ...Unless the author goes comedy route and gets him captured in a really dumb way (I hope not).
Dragon arrogance is definitely in play here - there's no way most of them would remember the faces / names of "ants", after all.

The first and third one are especially important. Most dragons on the battlefield would know him in armor and those that might have gotten a good look at him are generally dead. The fourth is also a really important factor since the dragons really do seem to take a "they're not even worth thinking about" perspective, which probably leads them to arrogantly believing that Leon's kills were most likely a group endeavor, especially since it seems pretty likely that Leon is a bit of an anomaly amongst humans, as a lot of the talk about his past has seemingly implied that he's way stronger than most other dragon slayers, but even then he clearly wasn't stronger than some of the strongest dragons (otherwise he wouldn't have gotten caught and imprisoned by the Silver Dragons.) It also seems quite likely that some dragon clans are affected by the fighting more than others, as you noted in the second point.
