Nah, I dont watch the Anime version because I know it will be a SHIT one, thats why I barely watch anime nowadays. Most anime nowadays just hot garbage, not even worth my time to watch unlike old animes where they have passion to make despite the limitations.

Anime didn't cut anything, is faithful to its source, the LN.
Is the mangaka doing this adaptation the one who is changing, rearranging, fleshing and polishing the original mediocre story and transforming it in the manga we all like.

It's possible that it's someone random (like a past sword saint), but with them making a point of not knowing who it is, it feels like they're implying it's someone related to Beryl (and if he doesn't know them, despite them being that strong, it's probably just him).

Luci makes a remembrance of the Sword Saint of her youth and we see a silhouette of him and his sword in her memories, that silhouette (including the detail of be barefoot) and sword is exactly what comes out of ambrosia, so no, that shadow swordman is not Beryl, not his father or anyone related to him,.
The recordof him was probably extracted from Luci memories in one of their past encounters because she was the one who knows him
