Guessing because of the sour cream and beef shanks, the dish is actually goulash or some similar stew, maybe squinting could stretch and say a beet free borscht, but obv very involved since he's doing a second stock/remouillage. Also, if doing a loose world map comparison for where his mother is from, maybe modern day belarus/poland or even maybe further south like hungary, depending on where aitheria is located.

Did it really goes overspread that much?
Cz I remember the last arc I read about that world domination n about Erina got kidnapped(?) again(?), (got bit hazy about this part)...
The mangaka had a chef who gave advice on the dishes served in the series and he left before the last arc started...
So it became just flashy cooking that made absolutely no sense and was completely ridiculous at the end and the story also become absolutely ridiculous essentially going down the Yakitate Japan route where the climax of the story is ruined by the story being so outrageous and unserious.

Honestly I just remember that the dif character cooking fights felt like they were repeating after a while, and the scale and one upmanship started to feel so absurd it was taking me out of being invested.

but tbh that's a common longer shounen series issue, still wasn't as painful as nisekoi. (I genuinely think you could use the later half of that series to torture people with how repetitive it got, it's like death via spoon 😭.)

Shokugeki no Suma put me off itself by being a shounen battle manga dressed up as a cooking manga. Isekai Izakaya "Nobu" is a cooking manga and doesn't try to be anything else.

Isn't "Lushia" meant to be "Rushia"? From the way they describe it, it´s "Even further north-east than the northern provinces", "on the edge of civilization. It's an incredibly cold place" it sounds like it's meant to be analog Russia.

I dunno about nisekoi, but I think I've got no problem reading it until the very end tho...

Yeah, the western restaurant industry is way less restrictive... but, from second had experience, in Japanese kitchens, the Shūshin koyō (lifetime employment in exchange for loyalty) is still very important. Heck! You can say this manga is partly about that. As in other traditional businesses/arts, the relationship between a apprentice and a master is (often painfully) built on trust, and going to work in another kitchen without, at the very least, telling your master, is a big no-no.

You can argue that Hans has already become a full-fledged cook and he no longer needs to maintain that relationship with Taishō, but, even then, working for a competitor would meant being kicked out of his restaurant for a long time.

good point- I didn't make out the pretty obvious "Rushia" word similarity when guessing about it maybe being belarus/poland. I was just thinking nearby modern states, but a grand duchy/earlier dynasty/tsardom of russia would have covered that area, although the manga maps seems to use modern borders, so it gets difficult to know for sure. Is there an agreed time period for the parallel worlds of Nobu/Gen?

Looking at the getup of the nobles I thought Aitheria would be German kingdoms around 1600, as I see no firearms yet but an abundance of swords and spears. The Izakaya Gen manga which plays out in Oiria (otherworld France) has the same timeframe, and i found an interesting hint on Wikipedia. King Hughues of Oria is still a minor and assisted by Celeste (his sister). In France, King Louis 13th had almost the same situation as he had his mother as a governess until 1610. So it could be late 16th century, early 17th century.

Captain-whose-name-I-Am-Forgetting-Right-Now mentions "Gun" Shellfish, and how they were named after guns who would misfire. So while firearms haven't reached the region yet, they very much exist and are in use elsewhere.
