The Japanese Maple, scientific name Acer palmatum, can most definitely be and is tapped for syrup; it's just not produced on a global market scale.
Also, to address the chapter: The food science provided is talking about the xenoestrogens amongst the isoflavones in soybeans primarily for the benefits for women, and while they are a source of protein they are not a great source of it, and there are differences between the various forms of protein that must be considered as well (soy primarily consists of glycinin and β-conglycinin, while meat proteins have three groups: myofibrillar proteins (50~%, mostly myosin and actin), sarcoplasmic proteins (30~%, mostly enzymes and myoglobin) and connective tissue (10~%, mostly collagen and elastin fibres)).
