Maybe when the organs aren't separated with zippers, they keep working? So cutting of a head allows the person to keep breathing, but cutting their lungs apart will render them unusable.

The way it looks, Buccellati punched the line and used his Stand ability on it, the line transferred the energy of that ability to Prosciutto, which unzipped his hand and set the line free. Then Prosciutto fell and Buccellati held on to the line.
