What i do know about plant biology is wilting occurs when there is dessication, which allows for bacteria and fungi to begin their work. Plants naturally dessicate overtime due to the lack of water and their vascular tubes slowly losing turgor pressure through respiration. Cut flowers, to my knowledge, still undergo this process until they eventually wilt due to the cells slowly dying and losing water. If the magical sleep in this situation also prevented aging, it'd be safe to assume that it's preventing cell aging across all organisms. So the cut flowers wouldn't be losing water pressure within them because their cells aren't aging....and the perfectly preserved cut flowers?
Was an interesting thought experiment on what would be considered 'sleep' for flora; bacteria and fungi can have a dormant state where they don't develop into mold or infections, plants dormant state is a seed, but when they become flowering bodies they have a day night cycle. I wonder if there are any royal trees around showcasing permanent nyctinasty due to being put to 'sleep'.
All that said, you know these ideas are more for a personal reader yeah? If an explanation isn't interesting or is cumbersome to you, you don't need to acknowledge it and just suspend disbelief while you read your fiction. If anything I hoped my hackney theory would elicit a better idea from someone instead of a leading question.
