I can't even begin to express how much I hate the word "Umami". It comes across as such a meaningless word. It especially seems that way in this chapter, as it's repeated so many times. At first the MC says he wants to cut the meat to smaller pieces, so the meat absorbs more umami (which should be "a savory taste that stems from proteins (and such)". Then he says the meat's fat is the source of its umami. So the meat absorbs the meat? I believe it's not 100% a nonsense, made up bullshit chef word -- but the way it's commonly used just comes across as horse shit.
