The explanation of rules really sucks... it would be more than difficult to learn it based on what she is saying...
Also why not just use wood for the pieces? I mean, the chess pieces are probably carved from that as well so it should be easy to think of. Personally I think cork would be too light and I also doubt that - in this medieval setting - they would have such high quality cork and processing methods to produce smooth and even pieces. I can't really follow the thought process on choosing the material.🤨

Domino is a matching game where you can place bets, usually a round of booze and snacks while playing. It's similar to some card games and mahjong in some strategies. The main goal isn't winning, but moving loudly the pieces and laughing at a brutal volume. You can find old men at every small town laughing and making noise with dominoes in Spain.
Playing cards is also a very easy to make game, they are popular since at least the XVI century judging by the literature of that time. They have the advantage that you can make several games with the same deck.

I never get these isekai protags being like "is it okay to take credit for this?" The only reason for intellectual property rights is so that people who invent things don't get fucked over by people with better production capabilities and market connections.

If you're in another world where that inventor (or any other subsequent rights holder) don't exist, it doesn't matter whether you steal their invention or not. At the end of the day, in this world, this knowledge is something proprietary to you and you deserve to take advantage of that.
