Last I checked, the translation was pretty much already done a while ago, so I kinda wonder why it wasn't implemented yet.
Any reason the German interface language isn't available yet?

The interface language feature is still in development and not finished yet.
More languages will be added when it's out of beta.
The two current options (spanish, french) are there because they are languages the devs can speak, as the backend is still expected to have changes to the way stuff works regularly, and they would require outside people to fix the translations in those cases.
