Ramen is a very fatty broth that is created by making a stock out of bones and just straight up adding oil, while udon uses a simple dashi stock made out of kombu (seaweed) and katsuobushi (dried bonito flakes).So in what way udon healthier than ramen? Like that makes zero sense to me.

Sure it'll vary from place to place but I don't think a typical bowl of udon is going to have significantly more noodles by weight (and calorie content) than a typical bowl of ramen.But aren't you just switching out the fat with the extra carbs in the noodles?
