So that's how he knew it was Ibuki.. The anime skipped a lot of Ayanokouji's observation and solving skills. I was always wondering whether he knew from the start or he deduced it afterwards, guess he indeed secretly interrogated and found out the culprit without making her aware of it.

Simple deduction. It doesn't make sense for anyone from the class to cause discourse when they are pretty unified on getting as many points as possible. This Plus the suspiciousness of two class C students both getting kicked out and sent to two rival teams and the entire class C at the beach retiring from the exam. Gave him all the clues he would need and this conversation was the solidifier especially after he read her reaction to him saying he trust her.
