The writer's really gotta keep the ostriches backstory straight. These ostriches are straight from the wild and they're damn powerful. Especially when comparing them to humans, they're top-tier. It's super off that any human would be able to just sneak up on that type of group. If... IF one could, there wouldn't be any quirky remarks from the little ones, it would just go right into a slaughter scene. They'd attack first, just like a wild animal from that type of living environment would. Honestly, I think the author made a bit too quirky of a character for themselves with these ostriches, so they're brain is having a hard time keeping up with the would and wouldn't do's of these creatures. That's how it feels to me while reading this, anyway😅.
I don't think it was ever actually explained how he was able to do that, there's maybe an implication that's a bit of a spoiler but it doesn't seem like that'd be enough to justify how he'd be skilled enough given their senses.

As for why the chicks don't attack, it doesn't state it but the implication in the LN is that Chicks have internalized the lesson of "Don't attack humans" and look to the MC for instruction on if something that hasn't actually attacked them or actually pissed them off (Yes there is a difference here between them seeing an enemy and them being pissed off). As stated in the chapter here they try really hard to avoid upsetting each other and especially the MC. Also I don't think the manga actually covered it but there were other humanoid races the birds used to hunt in the Plateau, but none of them could communicate so the MC allowed them to be eaten. It's possible she has already trained them enough to at least not immediately attack something humanoid enough before arriving.

Also, the author WAS smart enough to give themselves an out with the Knight lady's throwaway line complaining about how absurd some warriors could get, to the point of surviving decapitation. That plus her admitting that even in the Plateau to this day there are monsters that their only recourse is 'run like hell' plants the seed of the idea in the reader's head that maybe Rei and the murderflock AREN'T the biggest birds in the yard, just the biggest locally.
