It would be a betrayal of any trust she could ever have for his words that he likes her, even if she stopped him she knew what he was trying to say, and it would probably make it hard for her to fully trust anyone else's words of love in the future. She clearly stopped him and tried to push him into another sex friend relationship to prove to herself that those words can't be trusted, probably because of some similar experience in the past. If he really wanted another sex friend he could just tell her that he was just overly emotional because she was his first and to forget what he said, and it wouldn't be a betrayal because he'd have taken back his words by confirming her obvious doubts, but obviously he doesn't want that. And she didn't commit to anything, sleeping with someone else would be a betrayal only if she accepted his confession first.
