"Dismantling" animals sounds so awkward. Skinning? Deshelling? Gutting? There are all sorts of words that would sound better than "dismantling". It makes animals sound like robots.

Ya but all the words you chose are part of the dismantling process. Prepping/preparing, or just “butcher” are along the lines of what you’re looking for. There’s other words but it’s late and I don’t feel like googling for more than 5 min.
