from what little we've seen the MC do, it seems she is really strong. She was prepared to fight the dragon and didnt seem too put off by it, more confused as to why it was there. She got eaten because she was so exhausted from all the paperwork. She probably did amazing work to get premoted to knight comander, but since its peacetime theres no need to have her do stuff. So she just sat there wasting away, and since she was unable to say no the other knights just started mocking her.

Given indications, part of it was literally living in too much peacetime. We have the single image of her fighting monsters from chapter 1 and she notes in chapter 8 she hasn't been able to go onto the frontlines ever since she became commander. So, she likely has shown she was such a monstrous combatant that basically every country couldn't risk going to war with them, lest they get their shit kicked in and be vulnerable elsewhere.
To make it worse, they PRINTED the story of her disappearing in a newspaper that will likely reach past borders, so any of the countries would be able to find out that this monster is indisposed for one reason or another.

Being fair? They may actually be pretty competent... but competent doesn't mean jackshit if they haven't seen serious combat of any kind for several years, possibly a decade. For however long MC has been knight-commander, they likely lived in super peacetime. That's more than long enough for the muscle memory and combat awareness to wear and rust.

If the knight commander were such an important person why did they treat her like that? Or is she just a really bad yes man and it escalated to the current situation?

From the looks of it the fat noble she was reporting to was delegating pretty much all of his own work to her while her subordinates were escalating their own stuff upwards to focus on the things they found interesting. The Knight Order had turned into a Japanese black company.

I suspect that Rei/Rain Val Stein was the Knight Commander from several generations ago and suffered similarly before she retired.
