Would it be difficult for the manga to just do each route sequentially in full?

There are series that do things like that (either as you suggested or as spinoff "IF" volumes), but those are usually the big names that everyone knows. This isn't, say, Oregairu. Or even Koi to Uso.

I was more asking whether each route is lengthy and would require the manga to backtrack a lot (and therefore unlikely the routes get adapted in full). I suspect/hope at the very least maybe we get a bokuben style ending where each girl gets a couple chapters at the end dedicated to their route

Fully adapting the back end of the WN would be a messy and tedious thing. It would be much like Koi to Uso, where it took a full tank for each story to be completed. Maybe more.
