It's just a classic case of "draw a girl, call it a guy" situation since they don't know how androgynous guys really look like. Opposite is also widespread as well with all the "its not really yaoi if i call the literal shoujo male lead character a girl" mangas
Maybe. I would nonetheless point out that the artist know anatomy. Of females mostly.
I'll stick with woman until proven otherwise

Well the elf's a guy iirc (at least according to the tl), so even if the elf has feelings for him, considering the dad's past, I assume the dad doesn't swing that way and wouldn't really have any interest in that kind of fulfillment before his death.

First, it was the human general, ie. in-universe character who can be quite wrong, who told the audience that this 'storyteller' elf is guy.
Second, if you paid attention to this chapter, it's pretty much confirmed that he is she.

My guess is that by becoming n undead, MC's dad gave up on being able to return to his world. That was his real sacrifice. Instead of rushing to go back, he decided to wait for them to arrive there.
And in the case of MC, IIRC he didn't exactly offer his inability to die, but rather his entire life and being to belong to the spirits. So forsaking his "life" also can be interpreted as forsaking his will over "death", therefore he gave up his "death" not literally like his dad, but more simbolically. MC has seemed pretty confident some times that he's going to die sooner than later regardless, and he doesn't care about sacrificing himself for his goals. If he really was fated to become an undead like his father, and he knew, he would have acted even bolder without fear for death, I think.
