Nah, doing the traditional method has a lot of waste during off hours because the less popular items can end up on the belt for awhile and end having to be replaced. With digital ordering now a completely normal thing, it only makes sense for places looking to cut down on food waste (and lost profits) to switch to a by order system

That's with their chopsticks, iirc. A teen post a clip of him grabbing the whole bunch of chopstick off the drawer and licked their tips, then return it back into the drawer on some social media. For sushi on the belt, maybe from COVID? Leaving food out on the conveyor that will go around passing people who were chit-chatting and who know how many people would sneeze or blow nose (especially because of wasabi), that's a perfect petri dish...
