Ask the UFC. They didn't want the Dog brothers, for example. Supposedly because their style (Kali Tudo, which, in their own "gatherings", also allows the use of rattan sticks) was "too extreme" and "would attract political foes for being too brutal".
As for what they can do, there's enough videos online. They fight with minimal protection, both armed and unarmed, and without a judge. Their fights usually last a few seconds or a minute at most, which I assume was what the UFC was worried about. You can't show advertisements if the fights are over that fast.
