the artstyle/background is kinda bland, but it seems like effort was at least put into making the magic casting unique.

I've seen this 'ultra-pure water dissolvess stuff like acid' stuff elsewhere, but...

Even if it were true that ultra-pure water dissolves anything... Let's do a thought experiment.
We have one bottle of ultra-pure water. We have an herb, which we will lower into the water slowly.
What happens as you dissolve the first millimeter of the herb?
Well, naturally it mixes with the water, making it no longer ultra-pure...

Actually, the more you say you have to purify the water to make it ultra-pure, the less it can dissolve without losing its quality!

That is not how UPW works. But alas, this being fantasy it's probably it works over there. Still really funny though that it's also basically like holy water. I wonder if it works on vampires and undeads.

I low-key expected the "pure water insulates from electricity!". It's part of the trope, after all. Nay, is part of the science.
Instead, what we get is pure water dissolves herb. Like, yeah, but that's not exactly how it works. Water dissolves minerals, chemicals, and other substances which are polar (molecular structure which has positively charged atom and negatively charged ones stay at opposite side) because water itself is polar (positive H+ and negative O-). Against non-polar molecules, water won't do much (i.e. hydrocarbons--oils and fats).

And it's not like water will crunch a piece of solid rock. No, unless you have a running water which applies physical erosion on the rock.

Water that is 100% pure ie. only H2O is not significantly more reactive than water that has some impurities in it. I've worked with de-ionized water and while it is especially great for making precise concentrations of reagents It's completely safe to ingest or spill on your skin. It especially cannot break down the cellulose or the lignin contained in the plant fibers which is significantly more tough than our skin. They do teach chemistry in Japan no?

I reckon what you and the others pondering the pure water were skipping in your theories was the detail toward the end of the chapter: in that world, when you manage to make perfectly pure water, it turns into divine water, like the gods would possess. So, it acquires primordial magical properties. Now, when you keep this in mind, the seemingly nonsense the MC kept talking about earlier makes again sense in the scope of that particular universe. It's "common sense" in that world that perfectly pure water would have such properties. Though probably it's not common sense in the way that every joe or jane from the streets would know it. Maybe only very few do, but it's still just a natural law.
