Honestly, had this happened in almost any other piece of fiction, I'd be out crying about fortuitous encounters being bullshit, but with this manga, it just fits. I don't know why, but someone popping up when the MC is in trouble just fits.
I think it's because the MC's a good guy who makes connections, which end up helping him which makes it bearable, but I'm not sure if that's the only reason why I don't mind it in this manga.

I’ve been loving this story so far, it really feels like an old fairytale passed onto each generation.

Perhaps that’s what this manga actually is - illustrations accompanying an old story about a Knight traveling through the lands of old. It would certainly explain why some parts are ‘skipped’ or left without explanation.
