It's hard to find unbiased info online about animal slaughter in various countries because of the ethical divide. But from what I have been able to find, it seems like the typical slaughterhouse procedure in the USA, Canada, and most of Europe, (swine excluded) is to:
Step 1: Hoist the animal upside down.
Step 2: Stun the animal using either mechanical force, electricity, gas, or a handheld captive bolt pistol.
Step 3: Exsanguinate("bleed to death") the animal via cutting the carotid arteries and jugular veins near the heart shortly after it's stunned (typically within 15~60 seconds).
