@PINKwaTERboTTle she doesn't have an eating disorder, you got the order of factors wrong; excessive sleep and severe lack of apetite are common symptoms of long term untreated depression that is already crippling to the patient. She's perfectly capable of eating, just doesn't have the disposition to do so and after a while this type of diet will make the amount you can eat at once smaller. Hope this helps to make the character more clear.
