Not all classes have to be long. If she was to teach a large number of aspects of a class then yea it would have been longer. But she didn't feel the need to do that. While they called it an open class, it was actually just a short lecture. Lectures are often seen as these 1-3 hour long classes, but they can be as short as 10-20 minutes, which was about how long this likely took in-universe. They didn't ask her to teach an entire class period's worth of content. They just wanted to see her worth as a teacher. Better to do a short, concise lecture showing both her capability to lead a class and show off her overwhelming power but in a very delicate, subtle way. Some readers may not understand the true significance of what Rania did, but it was mentioned multiple times that not just anyone can summon the scales in the physical realm, especially so easily as Rania did with a simply clap of her hands. That, and the fact that the White Tower Master could sense the essence of the stars inside the Ignite spell Rania cast means it's that much more significant. Such a presence can only be achieved with absolute mastery of the spell, something usually only achieved after thousands or even millions of uses. In other words, an insane amount of practice.

In summary:
Physically summoned The Divine Scales, something only the most powerful people can do.
Directly showcased HOW a spell is formed by generating one step by step, showcasing how intricately she knows spell weaving.
AND her spells are essentially directly blessed by the Stars themselves.

Rania is the best of the best, and showcasing that was the point of this chapter. But not with overwhelming power. Rather, with complete understanding of magic and being able to delicately and perfectly craft a spell, while also making the summoning of The Divine Scales seem like an afterthought.
