If you pay attention at the start, you can see the author actually drew Ebichiri-sensei adam's apple right on the first two pages they appear.

Ritsu's great, can't wait to see further shenanigans regarding Mimi and Ibuki. Also, I believe she's now continuing with what Aria demanded of her from the previous round, of trying to grow outside of her comfort zone, maybe she'll even discover something for her to specialize on!
