Always wild to me as a Canadian how those isekais can have maple syrup. >_> Especially when you haven't been to the cold regions of this world.

(For your education, maple trees need to be exposed to very cold weather to start producing what later becomes the syrup (which is something of an anti-freeze), which is pumped up the tree with the sap when winter is over and temperatures come rising, then you make a hole in the tree to collect sap, boil it, and you're left with maple syrup, voilà)

other manga and anime also have this problem. maybe it's because the authors think it is similar to asian maples and don't really think too much about the winter requirement? either that or it is just a nice condiment for pancakes and the like so it is easier to handwave details

It's just amusing because the province I live in (Québec) is responsible for most of the quality maple syrup most people enjoy worldwide. >_> So y'know... The product itself appearing in a japanese isekai where you don't even have the same climates, let alone the specific tree species... It just... :wtf:

Well beans can be good and bad indeed.
good for health in moderation and it can in some places replace meat since it got protein... but not that important vitamin that only meat got.
Bad? often your body can't really digest it so you will get all gassy.. and fart alot if you are unlucky. even certain kind of beans should NOT be feed to children. since it can disturb their hormones. So far i know it is only immature soybeans that does that.

otherwise i enjoyed this chapter.

There's many varieties of tree that can be tapped for edible sap; every single maple genera can (and the maple genera is one of the most common tree in Asia), but so can trees of the butternut, birch, sycamore, and walnut genera, amongst others. The Japanese Maple, scientific name Acer palmatum, can most definitely be and is tapped for syrup; it's just not produced on a global market scale.

Also, to address the chapter: The food science provided is talking about the xenoestrogens amongst the isoflavones in soybeans primarily for the benefits for women, and while they are a source of protein they are not a great source of it, and there are differences between the various forms of protein that must be considered as well (soy primarily consists of glycinin and β-conglycinin, while meat proteins have three groups: myofibrillar proteins (50~%, mostly myosin and actin), sarcoplasmic proteins (30~%, mostly enzymes and myoglobin) and connective tissue (10~%, mostly collagen and elastin fibres)).
