I think what she mean is sliced bread or bread that is baked in mould similar to a loaf or sliced bread...I don't know what she was talking about with the bread. Even risen bread is older than the middle ages.
Maybe she's confused because the Japanese didn't have it until the Portuguese brought it in the 16th century?

I think she means that The Other World doesn't have the same infrastructure Japan/Modern World had when they developed some kind of mass production (didn't go thru industrial revolution, etc).
Meaning that some Other World People were taught (like Hans in Nobu) Modern World techniques from the stores that opened in Other World.
Of course that's just what I can understand????? Very confusing lol!
