I'd argue it depends more on what you're applying to. Michelin star restaurant looking for training in French style kitchens, nah take your smile and shove it (likely what the head chef would tell you, in a more aggresive way). Nice diner/izakaya not too focused on the bottomline of profits (tho they mostly are tbh, given their peak hours are mainly the workforce going out to drink and eat) yeah a smile would fit the vibe more than profiteering within the industry, mainly cause good service means they won't be as aware of just how much they've drank so far
