He is not wrong, thought: in modern day Japan, Taishou was just a random nobody. The reason why he is thriving here is due to the novelty of his cuisine to the local, the access to luxury items at unfairly competitive prices, and all the modern technologies the other cooks don't have.

Also, "catering to the peasants" my ass: you need to be a noble just to serve the tables, the average clients are city guard commanders, archbishops, guild leaders, city lords, queens and the fucking emperor...

I think it's stagnation for sure. A big plot point around this series (both Gen and Nobu) is finding your own flavors as a chef. From the backstory Ludwig tells us, he never really found his own flavors and was just content in merely copying his father's flavors.
It is harsh to say his food is unpalatable and give no explanation, but I think on how much ego Ludwig had, he wouldn't have taken his dad's advice to heart to find his own flavor.

that fiction fresh water fish liver. but (normal) catfish liver too small. while popular fish liver dish use monkfish, a sea water fish. it does have head-body shape similar to giant catfish.
I mentioned this in an earlier chapter but it‘s probably a Wels catfish, or based on the Wels catfish

they’re native to Germany (wels means catfish in German) and the typical size is range 30-40 lbs so enough to eat a liver presumably

the muddy flavor is from a compound called geosmin, produced by algae and bacteria, which is why fish from cooler, clearer waters are less likely to taste muddy

The maid girl said that she sometimes visited there, but judging from how she ordered food, I'd bet she was a regular at Nobu.

That's a bit undermining Taisho's ability. Isn't he supposed to be good enough to be head chef at Shinobu's family restaurant which is long time established shop with great reputation or something?
