I have a feeling that without Nobu's influence the higher class patrons wouldn't have interacted with the more mid class to lower class patrons, while there is the possibility that they would eventually, Nobu just accelerated it and lessened/removed any notion of prejudice

He bought it before the talks of the new toll road construction was made public. Before that it was literally a piece of unwanted land in the middle of the sticks near a swamp.

He's also a single trader, so less than a merchant and more of a peddler, even if he has big connections. At the very least he wasn't prominent enough to be invited directly to the banquent the previous night.
