Probably go to a dedicated restaurant for it. Those have different flumes for different customers and just a higher standard of hygiene.

Didn't they make a big deal in the chapter where they hired Eva about how they had to boil river water before they could drink it?

It looks like they’re using water direct from a natural spring (pg.2). It should be much safer than river water (as the characters also say, clean water).

Well, that's mostly just using contaminated river water. Could easily replace that with properly filtered tap water in a safer location and have fun there.

They were referring to the rivers in Aithera itself. This river is from Branton Woods.

Tap water in some countries are not chlorinated.

Seems like some areas in Jpn use river water. If their tap water is chlorinated, if the concentration is too high the scent can come out into the noodles too.

Nagashi Somen always seemed super interesting to me, though I've never been able to experience it.
