How does the Nobu duo pay for their ingredients in present japan. I mean aleria currency cant work in present Japan and it doesn't look like they make much business in japan so what gives...

Aleria's coins are made of precious metals like silver and gold, so they pawn those off (ch 16). Normally it'd be really suspicious but the antiques store owner just pays for em without asking questions.
A few chapters (Chapter 16) ago they mention it, but Shinobu takes some of the gold coins they receive and sells it to a shady antique collector who does who the heck knows with it. I’m of the opinion he also knows about the gate to the other world, same with the landlord who’s renting the store area to the two (even though the landlord never shows up in person and all the rent money is being taken care of electronically)
With that gold money they use it to buy japanese seasonings and alcohol while keeping most of the gold to procure ingredients from the Other World
The name of the dish is "Pulpo al ajillo", with double L. I actually like more "pulpo a la Gallega", it's without the garlic and with paprika (the spicy or the sweet).
