I just realized that me living in a seaside town has given me a skewed view on the price and availability of sea foods...
I mean, they literally farm oysters by the hundred thousands in easy driving distance from me. Maybe if I bought them from a store through a middle man or if they had to transport them long distances I could see them being expensive. Certainly, restaurants will also add a mark up. I just get flash backs of shucking whole sack full of them last year like it ain't no thing, so I can't wrap my mind around the expensive part.

Buying them on a farm it's about $1 an oyster. Which is a lot considering you can get them for free if you harvest them yourself. Clams, oysters, and mussels are limited to a 1/2 bushel a day during the season and in select locations, and some towns require a scallop license. Also, there are rules on the size and quantity you can harvest.

Dashimaki tamago Huh? wdym its difficult? As long as you have the ingredients, right pan temperature and timing, its rather easy. I always make like 5 rolls when people are coming. Its similar to how you make regular tamagoyaki but slightly more difficult since its rather delicate and soft(similar to a French omelette) but with dashi (I prefer katsubodashi) . The flavoring will be on the tough side since it will be sometimes hard to control especially when making larger portions.

The ones I make is by no means perfect but its true that the ones I tasted in a Japanese restaurant is on another level entirely. flavor wise and texture wise.

I used to hate oysters as a kid. During the summer when I was nineteen, I went on a date at an oyster bar with someone cute and--maybe it was the wine, maybe it was the evening breeze--I've loved oysters since.
