I thought that was mainly from overfilling the oil and then the hot oil hits the flame under the pot. but I guess I have also heard advice to thaw the turkey firstThe distance of splashing is based on height dropped above the oil's surface. And the bubbling surface has everything to do with water/ice content you add. Water and oil don't mix so it rapidly creates bubbles of steam, coated in oil, that pop.
