Remember that the tiny female chef made a dish with cheese during the taste testing a few chapters ago... why is Asuta acting like milk is rare now?
TBF cheese is the way to preserve milk - without refrigeration unless you've got a cow right nearby you're probably not going to be getting good milk

Which rather raises the question of how he even got milk in the first place but I digress -you'd think that if he has flour he'd start with sourdough bread....

That makes sense why it'd be easier to get cheese than milk.

I found a farmer's blog that tried leaving raw milk unrefrigerated, it lasted around 24 hours before slowly turning into yogurt. We know Asuta got the milk from the hooded people, so the next question is how fast were they traveling that they got the milk to Asuta before it stops being milk?

Then again, author could just handwave it by saying the milk came from an animal with different bacteria composition than a cow...
