This is more of a crepe than a pancake... the flatter kind of pancake is usually at least 5mm thick, and that's pushing it into crepe territory. The difference between the two is, pancakes include leaving agents, while crepes do not, plus, pancakes include at least double the amount of liquid with similar amounts of flour and eggs. Japan also has a special type of pancake called fluffy pancake (the kind in this chapter), which includes egg whites slowly mixed into the batter, which results in a really thick, fluffy, and airy pancake (some call it soufflé pancake, but it'd make more sense to call them mousse pancakes)Looks more like american pancakes to me.

Since he's Japanese, the better reference point are Japanese Hotcakes. Even thicker than what standard American Pancakes aim for, way more fluffier and cake like.Looks more like american pancakes to me.

I remember homemade pancakes being this way too back in the early 2000s. Iirc my mom made these pancakes with simple pancakes mix, leftovers from Asian cooking, a typical frying pan, and a lack of exposure to western foods beyond KFC and McDLooks more like american pancakes to me.
