Sansui is also immortal, so theoretically all he needs to do is a few (thousand) years of trial and error to try and replicate what Suiboku could do. He learned the basic sage techniques the same way.

Not quite.... From what's shown in the story, each Sage, outside of the basic Arts, finds his/her own "Heart" and "Soul" from which the techniques spring after enough grokking.
The Arts themselves are more like...Principles.. which each Sage "discovering" the way to use them according to his individual nature and use of his spirit.

So the way Suiboku uses/activates certain techniques may well not be the way Sansui uses/activates them.
Even if Suiboku disappears/dies, the stories of the Divine Weapons alone are enough to show things can be done through Sage Arts. It's up to Sansui to figure out the how , and as a Sage he has the time to do that. If he chooses to do so.
