A good story should never be altered.

Eh, sometimes you need to make some adjustments to actually get a good story.

Editors being too intimidated by authors to say "no" is what gets you ridiculously bloated 700+ page novels where nothing happens.

I'm thinking of Wheel of Time but I'm sure there's more recent examples.

A good story should never be altered.

The brothers Grimm heavily altered some of the tales they wrote down. For example in the original version of Little Red Riding Hood, the girl doesn't recognise the wolf and gets eaten. Later versions then introduced the hunter and stones the Grimms wrote down.
