To be completely honest, I think this is as plot heavy as it can get with what it has to work with. So I don't think it is slow, it just has nothing to build into, so it just takes its time with the little things. Not much you can do with an isekai based around a practically powerless MC (in terms of his own combat strength at least) and a kitten. MC isnt the hero, nor some shounen battle manga protagonist. He is just a dude with a cat.
Also the series isn't fan-service driven, so it can't build up endless amounts of recycled plot lines. Those stories are fast paced because it allows them to show a bit more of the same harem of girls, with maybe a guest pair of boobs to throw a bikini on (or off?) and call it a chapter. Not delving too deep into significantly unique plot lines, but not SoL slow either. This isn't that kind of story either.
This is fairly heavy SoL style. Meaning each arc more or less can be standalone stories, where chronologically speaking, they don't necessarily have an order if maybe 1 or 2 small alterations are ignored. For example, if MC getting a horse and his gun made was ignored, then there would not be really anything to go by in order to place this arc on a time line (so far at least).
