@justanothermanganerd Right. I've never baked/cooked anything that would require fresh bread as an ingredient, but that's certainly a good explanation. I guess I didn't realise it because I haven't prepared such dishes myself.

@Kaarme Japanese sandwiches like katsu sandwich and tamago sando usually don't have crust on them. If it homemade, the more reasons to cut the crust off. Try google some Japanese sando as reference

@Hinji They polish rice until it's shining white, so they got confused and polish also bread until it's shining white.

typical Japanese shokupan crusts are too tough in comparison with the fluffy interior (because of the enclosed baking boxes), so they're cut off most of the time in sandwiches and stuff
