So, MC now has basic fighter skills, holy knight skills, and examiner level skills, whatever they are.
And as seen in chapter 3, it seems like he doesn't even need time to train and get used to them... so I'd say mister young aristocrat is in for a nasty surprise.

In some manga, they do.
They don't need to go around telling everybody about it. They tell the MC and that's enough. If word of him using the family name comes to their attention, they take action against him.
The one example I remember at the moment is the "heavy knight" one. When they exile the MC, they tell him not to use his family name and they try to punish him when they suspect he does.
