Because it's very well liked and they wanted her to continue a very successful series.
Idk like I guess if people want it, I just think too many series "keep going because they're successful" even when the original plot ended and it hurts them. The scummy gap student is no longer a gap student. I guess I'll keep reading until it drops in quality but like, idk it would have been good if it wrapped up with them getting into college.

Too many yuri series keep going? I feel like it's generally the opposite and they typically get canceled once they've gone past 20 chapters.

You may feel however, but its also necessary to accept that this is well liked and promoted a lot by its publication, so it's only natural to have discussions around continuing it. Her being a ronin student was also not that integral to me. It was her character, the relationship between the two of them and how they react to random events that sold me. If you don't feel the same, it's fine to drop out. This is largely a chill, romantic comedy.

Not Yuri specifically no, manga in general. I was complaining about HameFura continuing post graduation a while ago for instance. I am however a massive GL reader and collector so I do know that most GL do not have this issue, most tend to be shorter than this even, but I'd argue that's fine. I like when a story sets up a premise, does it then ends.

I think you're valid for enjoying the series on just the character dynamic and wanting to see more happen to them. I also don't think not being a ronin ruins the series but that was the setup for the series, and that's kind of what bugs me. The series was sold to me as "a scummy gap student", she was a piece of shit, self interested, manipulative, and it was a story about her working towards a goal while improving herself. I kind of think that happened. We don't have a saint now but we do have a developed MC and I think the story may have been better ended there, but who knows. Maybe it'll surprise me with something down the line.

I think we agree on that generally. I wouldn't have minded if it ended earlier. You're right, it did conclude the initial arc. I just view this as extra stories, similar to how many Korean and Chinese series have extra chapters after the main narrative has ended. I'll only have issue with them if they contradict or backtrack on the progress of the characters.
