While that is the popular version of the vampire powers, in old stories sunlight was either weakening or rendered their powers null
Likewise stuff like stake to the heart didn’t kill vampirs straight away, but you used them to bolt a vampire to the ground so the sun would do its job by morning.

By the way some of the other weaknesses like garlic and water were due to the reaction people and animals with rabbies had to those things. The strong smell of garlic abhorred them while with all the drool they feared water (choking)
