It’s bad enough uploading a chapter from 2 years ago. I couldn’t remember where we were in the plot so I had to read through most of it to realize it’s old. But why is that website so awful too? Repeatedly crashing before it even loads half the chapter, to where I’m reading one page and refreshing because the page keeps breaking or not loading

tbf, the official is not really official, more like legal licensed.
basically someone buy the right to publish, translate to their market's local language, and distributor it. so it took someone have to decide to buy.

Pretty much. J Novel Club doesn’t license series from chapter-to-chapter, like Shueisha does with Weekly Shonen Jump series. It licenses the volumes first, THEN translates and releases the chapters in it. That takes time.

I think the last time anyone said anything was like last October. Just how SICK was the Mangaka. It's been well over a year since the last chapter. Dude got a hit anime, manga was firing on all cylinders and then everything stopped.
